What is the difference between an acorn-fed Iberian ham and a fattened Iberian ham, and which is the best for my taste preferences?
The main difference between an acorn-fed Ibérico Jamón Ibérico de Bellota and an Ibérico Jamón de Cebo lies in the way the pigs are fed and, consequently, in the taste and quality of the meat.
Jamón Ibérico de Bellota comes from Iberian pigs that are reared free-range in dehesas and fed mainly on acorns during the montanera season, which runs from October to February. This acorn-rich diet gives the ham a distinctive flavour and a smooth, unctuous texture. It is considered the most premium type of Iberian ham due to its unique quality and flavour.
Cebo Iberian hams are reared in more controlled facilities and are fed mainly on natural feed and cereals. The flavour of this ham is milder compared to the acorn-fed ham and its texture can be a little less unctuous.
The choice between the two types of ham depends on your personal preferences. If you are looking for a more intense flavour and a unique gastronomic experience, acorn-fed Iberian ham is the ideal choice.
On the other hand, if you prefer a milder flavour and a more affordable price, Iberian cebo ham may be the right choice.
In any case, both varieties offer a delicious culinary experience.
How is a whole piece of ham preserved?
We recommend storing the whole piece in a dry and cool place, with a temperature of approximately 18ºC. The best way to store it is by hanging it, avoiding the use of netting or other wrappings. It is of utmost importance to protect it from any exposure to light.
Once you have started to cut the ham, it is advisable to consume it in less than 30 days to preserve its flavour, quality and properties in optimum conditions. In the summer months, faster consumption is recommended, especially if temperatures are high. Quick consumption is also recommended in high humidity conditions.
Each time you cut a portion, be sure to cover the remaining ham with a lint-free cloth or with the first layer of bacon or rind we have removed from the ham. This will help protect it from contact with air until the next time it is to be sliced.

How are the vacuum-packed ham or shoulder packs preserved?
The ham or shoulder ham is vacuum-packed at the very moment it is cut, whether it is cut by one of our expert cutters or sliced in a machine, so it preserves all its qualities until it is ready for consumption.
To enjoy all the flavour, aroma and properties of vacuum-packed sliced ham, the best way to keep it is in the fridge at a temperature of approximately 5ºC. Keep it in a place in the fridge and do not put anything on top of it, although the ideal is to keep it in a separate compartment, so that the vacuum holds without any surprises.
Always pay attention to the expiry date.
Can I open the packets of packaged ham and eat them directly?
To enjoy it to the full and make the most of all its properties, we recommend:
Take out the packet of packaged ham or shoulder ham half an hour before consumption, in winter it may be a little longer.
Remove the ham from the packaging and place it on a plate so that it reaches room temperature.
A trick for not looking at the temperature and knowing that the ham is ready to taste is when the slices separate easily and without breaking.
Even so, the ideal time for the ham to regain all its nuances of flavour, texture and aroma is at a temperature of approximately 24ºC.

How are the hams and sausages shipped?
The products are shipped in accordance with Spanish and EU regulations on the transport of perishable foodstuffs, and are therefore sent under suitable temperature conditions that preserve the food's cold chain.
All our hams and shoulders arrive wrapped in netting and are shipped in individual boxes. The rest of the sausage is vacuum packed.
How do I return the products?
First of all, if you are asking yourself this question, Puente Robles would like to apologise and we would be grateful if you could tell us what has happened so that we can provide you with the best possible solution, in line with our objective, excellence in Iberian products.
The return of products purchased from www.puenterobles.com will be made only and exclusively when it is demonstrated that the product is in poor condition and provided that it has been notified within a maximum period of 15 days from receipt of the product.
In order to exercise this right it is necessary to keep the original packaging of the product and that no more than 10% of the product has been consumed.
